Palo Túnel is one of the oldest and most traditional liqueurs in Mallorca dating back to the late 19th century – it has a Protected Geographical Designation.
In its beginnings, it was known as an elixir of life like many other international liqueurs (Chartreuse, Amaro, Jägermeister, etc.). It is made from quinine and gentian bark, it has healing properties to treat gastric, respiratory, fevers or even to combat malaria. Over the time and due to its popularity, natural sugars were added, with the intention of softening the intense bitterness.
Because it was easily oxidized, alcohol was added, and the result is what we now know as Palo. The name Palo, literally means stick, and it comes from the stick that the master distiller used to move the sugars in the wood-heated copper ovens, resulting in a delicious and highly aromatic roasted caramel.
At present, Antonio Nadal Destil.leries continues to produce it in the same artisan way, with the aim of preserving the culture and customs of Mallorca. The final product is a silky. thick and intense liqueur, with aromas of roots and bark from the quinine and gentian, and with an alcohol content of 30%.
